Creamy all-in-one bowl

When I’m scanning recipes in Hearty Vegan Meals for Monster Appetites, I tend to get visions of buying even fatter pants and possibly investing in a rag on a stick.

But the Creamy All-In-One Bowl didn’t look too terribly waist expanding, so I gave it a go. Tofu, broccoli and pineapple in a creamy peanut butter dressing over brown rice. Look, bonus fruit serving! And it was really good. The dressing had a nice tang.

Tempeh wings

The tempeh wings from the Don’t Eat Off the Sidewalk zine are always popular around here. They’re much better for you than the processed wings you can get. I’ve successfully cut back on the Earth Balance in the sauce before, but didn’t bother this time. I like my sauce on the side so the wings stay crispy. On the side we’ve got some leftover breakfast potatoes and steamed broccoli.

Healthier fettuccine alfredo

When you do your grocery shopping once a week, you learn to have some meals with ingredients that will make it to the end of the week, or even beyond if need be. Things happen and you can’t always cook everything when you want. This Fettuccine Alfredo from The Happy Herbivore works well as that dish. And broccoli is one of my go to sturdy vegetables. Other great back-ups are frozen peas and frozen greens.

This turned out creamy and a little tangy from the nutritional yeast. It even made an abundance of sauce so there was a little extra to drag my broccoli through. Oh, and this fits in great with a lazy vegan lifestyle. I also used that Good Karma Flax Milk again with good results. Sprinkled on top is the Vegan Parmesan from Yellow Rose Recipes. I like it better than Parma.

Sweet and Spicy Seitan-Potato Empanadas

Viva Vegan! has been in my possession for a while, but I really haven’t made much out of it yet. So when planning the weekly shopping recently, I picked out two recipes to make. The Sweet and Spicy Seitan-Potato Empanadas was the first one. I’d already stocked the freezer with a couple of packages of vegan empanada wrappers so these went a little faster than if you had to make those too.

Kevin doesn’t like olives, so I left those out. Instead of making seitan, I just rehydrated some beefy TVP chunks. They worked beautifully. The more you cook, the more you get a feel for easy substitutions.

Just a little steamed broccoli on the side to round out the meal. This was lunch. The seams held up really well. Only a couple leaked.

 

 

 

A Simple Dinner

I’ve been craving this kind of food lately. Simple, healthy. Steamed broccoli, baked beans, brown rice and tofu sprinkled with gomashio and Bragg’s. It would’ve been a greener plate but lunch was a giant bowl of kale salad. The tofu was just sautéed in a pan, beans and broccoli cooked in the microwave and rice in the rice cooker. A healthy tasty meal doesn’t have to involve a ton of work or destroying your kitchen. It can be this simple.
