You know what else is awesome about those tempeh wings I posted about earlier? Leftovers make a great sammich. I heated them up on the George Foreman, slathered the bun in Veganaise and made a garlicky kale salad for the side, using red kale this time.

Tempeh wings
The tempeh wings from the Don’t Eat Off the Sidewalk zine are always popular around here. They’re much better for you than the processed wings you can get. I’ve successfully cut back on the Earth Balance in the sauce before, but didn’t bother this time. I like my sauce on the side so the wings stay crispy. On the side we’ve got some leftover breakfast potatoes and steamed broccoli.
Falafel and kale slaw
Falafel isn’t that hard to make, but when I saw frozen bags of falafel balls at Trader Joe’s and they were vegan I decided to try them out. These were really good. No complaints at all. I whipped up a quick tahini sauce to drizzle on top. It was tahini, hot water, garlic and lemon juice, I think.
The Kale Slaw with Red Cabbage and Carrot is another recipe from the Whole Living Kick Start Cleanse. And another winner. Of course you pretty much can’t go wrong with kale. And this is another one that sticks to mostly seasonal produce. Also, it’s pretty!
Tofu chilaquiles
When you only do your grocery shopping once a week, you need a few late in the week recipes. The Tofu Chilaquiles from The Happy Herbivore works well for that. I’ve had a few versions of chilaquiles and I think I like the kind you cook up with corn tortillas better. A bit of Daiya might have found its way into these, but not a ton. Just a little sprinkle on top. All I had was some raw beet chips, so those served as the corn chips. The leftovers were really good spooned inside of steamed corn tortillas and eaten taco style.
Salad & dumplings?
This is what happens when you don’t have a meal planned but you’re trying to avoid going out to eat. Remember those frozen dumplings? They’re also good pan-fried. How about a salad? Sure! And an orange? Why not!
