A Simple Dinner

I’ve been craving this kind of food lately. Simple, healthy. Steamed broccoli, baked beans, brown rice and tofu sprinkled with gomashio and Bragg’s. It would’ve been a greener plate but lunch was a giant bowl of kale salad. The tofu was just sautéed in a pan, beans and broccoli cooked in the microwave and rice in the rice cooker. A healthy tasty meal doesn’t have to involve a ton of work or destroying your kitchen. It can be this simple.

 

Leftover Tofu Salad

The freezer is overflowing with random bits. Time to use some up! I grabbed a frozen quarter pound of tofu and defrosted it in the microwave, then squeezed out the water and diced it really small. Mixed that with Earth Balance vegan mayo, a couple of tablespoons of finely minced onion, a small finely shredded carrot, a half teaspoon of tarragon and salt & pepper to taste.

This made enough for two sandwiches. I had the first one with a side of baby lima beans, also from the freezer.

Vegan Drinks Atlanta III

Finally I made it out to a Vegan Drinks event AND got to eat. This month’s gathering was at The Graveyard. It would’ve been criminal if I didn’t show up considering that’s 2 miles from my house. I even tried to ride my bike up there, but got a flat a block away and ended up driving. I am an asshole though and didn’t socialize and instead hid at a table with friends.

The Graveyard put out a nice menu with some great options. I got the in ponzu sauce over soba noodles w/ julienned carrots and bok choy.

My only complaint is that the tofu could’ve used a little marinating. The only flavor I could get off of it was the sesame seeds and maybe sesame oil. I love sesame oil so that’s not a terrible thing. The amount of food was perfect and left a space for dessert. We had the choice between a duet of sorbets or coconut cake. CAKE.

Kevin had to fly out of town and came by for a quick scarfing, so I ordered him some food in to go boxes. I had one of his wings and it was tasty as always. Get ’em Tuesdays during wing night. You’ll have a few vegan sauce options. And as an entreé he had the BBQ tempeh w/ chipotle rice and sautéed spinach. I ate his leftovers the next day for lunch and they were really good, especially the chipotle rice. Looking forward to the next installment!

Saturday eats and bike ride

How have I lived in Atlanta for 13 years without ever having gone to Ria’s Bluebird? Well, I fixed that Saturday morning. Got there bright and early to mostly beat the crowds and tried the Bionic Breakfast with a side of spicy tofu. It was delicious especially topped with sriracha. The tofu was good, but ended up making it too much food for me. It made me sad to leave some behind but we were headed out for a bike ride afterwards and I didn’t want to carry leftovers.

After eating, just outside, we found this. Looks like something that could be explained by alcohol.

Jared and I headed out on a bike ride. We kept out Memorial towards downtown, then headed North, took Marietta St., cut back across 17th St. and headed to the new section of Piedmont Park. Looks like it is no longer a secret.

It was HOT, so a visit to King of Pops was sounding good. Except he wasn’t on the corner yet. We thought about heading to the Ponce festival, but headed to The Porter instead. They open at 11am on Saturdays. Yay! Apparently beer makes a great recovery drink because I felt awesome the rest of the ride home. I ended up riding a total of about 24 miles. I forgot to set my bike computer and only got a few legs on map my ride. I really wish that app didn’t eat so much of my iPhone’s battery.
