Easy enchiladas mole

This Doña Maria ready-to-use mole sauce was a favorite to keep on hand for quick meals. It disappeared for a while but it finally showed up again at Buford Highway Farmer’s Market. Full disclosure: I have not contacted the company to check if the “natural ingredients” are indeed vegan. Maybe I should actually do that…anyway. (Update below post) Last time I posted about it, we ate it in the form of an enchilada stack. This time, I rolled up Trader Joe’s fake chicken strips fried up with onions and garlic and Daiya in flour tortillas, stuck them in a square pan, dumped the mole sauce all over then sprinkled with Daiya. Baked it for around 25 minutes at 350F and it was food. To keep all the food mud colored, we had it with a side of refried black beans, from a can all lazy like.

UPDATE: So after I posted this, I went ahead and wrote the company asking about the “natural ingredients” to make sure they were vegan. And they are! Here’s the response:

Making tofu

Kevin has been obsessed with making tofu for a while and finally busted out his first batch. It’s actually pretty easy to make. And it’s really tasty. He used lemon juice as the coagulator and the slight lemon taste was nice. So when it came time to cook some up, I didn’t want to season it heavily. We settled on frying it up in a pan with some onion, salt & pepper and a little sprinkle of nutritional yeast. With it, some pink rice I found in the bulk bins at Sevananda, garlicky raw kale salad and a sweet dumpling squash tossed with smoked paprika and roasted. And I sprinkled gomashio over everything just because.

Thanksgiving turned to 11

Sure, I’m a little behind on posts. It’s not that obvious until I get to the Thanksgiving pictures … on Christmas eve. What happens when you get together a couple dozen vegans that love food on Thanksgiving? An epic feast.

Here we have a Gutenfleischer’s glazed ham and turkey, a Tofurky (actually 2. one got deep-fried), a Match Meat holiday roast, the Field Roast Hazelnut Cranberry Roast and I’m not sure what else.

We didn’t mess around with gravy and dressing.

Roasted veggies, mac & cheese, butternut squash casserole, mashed potatoes, crescent rolls, candied sweet potatoes….

Green bean casserole, maple roasted brussels sprouts…

Too much thali

Kevin, Simon and I stopped in to Chat Patti for a late lunch and we got strong armed into ordering the thali. Hey, it was $8.99. How could we not? We each got a plate of what I call Indian nachos:

Fried bits covered with various condiments. Mmm. And, the thali…needless to say I took home leftovers.

The cabbage thing, third from the left, kind of tasted like froot loops. In a good way. Nothing was super spicy this time, but that’s not always the case. Vegans, just ask for no dairy and they’ll set you up. I think those ring things have honey in them though, so keep that in mind.

Grandma’s Boy brunch potluck

It somehow came out at one gathering or another that I’d never seen Grandma’s Boy. And just like that, a Grandma’s Boy potluck was planned. Brunch and a movie. Okay, it wasn’t the worst thing ever, and I did laugh a few times, but mostly it was underwhelming. But now I’ve seen it and can stop getting harassed about it.

Brunch was awesome though:
